I don’t recommend leaving them at room temperature because the shells can get soft due to the moisture in the fillings. If not stored correctly, the texture will change and instead of being crispy on the outside and chewy on the inside, they may become stale and soft.

How to Keep Macarons Fresh

Place macarons in an airtight container and keep in the refrigerator short-term or freezer long-term.

You can also place macarons in bakery boxes and keep them in the refrigerator for 2-3 days. I wouldn’t recommend longer than this as the boxes are not airtight.

How Long Do Macarons Last

  • Refrigerator – Can last in the refrigerator for up to 1 week
  • Freezer – Can last for 2-3 months
  • Room Temperature – I don’t recommend leaving macarons at room temperature more than a couple of hours since the shells will become soft and the texture will be affected

After baking the shells, let them cool for about 20 minutes, place them in an airtight container, and then refrigerate them or put them in the freezer. The best way to store shells is side by side. This way you can fit a large number of shells and prevent any cracks. Shells can be kept in the refrigerator for 1 week or in the freezer for 2-3 months.

After baking the macarons, let them cool for about 30 minutes, fill them, and place them in an airtight container in the refrigerator for at least 24 hours to mature. After 24 hours, you can either leave them in the refrigerator for a week or place them in the freezer for 2-3 months.
